Paneer Paratha

Ingredients
- 150 g paneer
- 2 cups of wheat flour (180 g)
- 1 cup of full-fat plain yoghurt (150 g)
- 3 cloves of garlic
- 2 cardamom pods
- 1/2 teaspoon of turmeric powder
- 2 tablespoons of olive oil
- 2 tablespoons of butter
Directions
- Preheat your oven to 250 degrees Celsius
- Begin to prepare the filling for the paratha. In a pan, heat 1 tablespoon of olive oil over medium-high heat.
- Finely crush the garlic cloves and add to the pan. Fry for 1 minute.
- Add the paneer to the pan and season with the cardamom pods and turmeric powder. Mix and cook for 5 minutes, stirring continuously.
- Remove from the heat and transfer to the side to cool down.
- In the meantime, make the dough. Add the wheat flour and yoghurt to a large bowl and mix together.
- When dough starts to form, knead the dough with your hands on a flat surface until all of the ingredients have been completely incorporated (about 5 minutes).
- Cut the dough into four equal portions and shape them into balls.
- Roll out each ball into small circles.
- Place a spoonful of the cooled paneer filling onto the centre of each circle and fold the edges towards each other, pressing the edges to seal.
- Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a fry pan over medium-high heat.
- Once the oil and butter are hot, place one of the parathas in the pan and cook for 5 minutes, flipping halfway through.
- Once golden brown, transfer to a plate and cover with kitchen towel to keep warm.
- Repeat Steps 11-13 for the rest of the parathas.
- Serve your delicious homemade paneer parathas with chutney and raita - your kids will love it!
