Ingredients

  • 300g Paneer (cubed into 2-inch pieces)
  • 50g Olive Oil
  • 2 tablespoons Clarified Butter
  • 1 teaspoon Black Mustard Seeds
  • 5-6 Dried Red Chillies
  • 1/2 teaspoon Asafoetida
  • 3 chopped Green Chillies
  • 1 teaspoon Turmeric
  • 1 teaspoon Coriander Powder
  • 1 teaspoon Cumin Powder
  • 1/2 teaspoon Red Chilli Powder
  • 200ml Thick Coconut Milk

Directions

  1. Start off by heating up the olive oil and clarified butter in a heavy-bottomed kadai (pan). Once it’s hot, add mustard seeds and let it splutter.

  2. Then, add the red chillies and let them sizzle for a few seconds.

  3. Add asafoetida, green chillies, turmeric, coriander powder, cumin powder and red chilli powder. Give it all a good mix and cook until the edges of the spices start to turn slightly brown.

  4. Add the cubed paneer and stir for a few minutes until it’s evenly coated with the spices.

  5. Now add the thick coconut milk and let it simmer over medium flame for about 20 minutes.

  6. Stir the mixture occasionally so that the spices don’t burn and the coconut milk is absorbed evenly.

  7. Once the coconut milk has thickened and the paneer is cooked through, turn off the flame.

  8. Joke: What did the curry say to the paneer? Nothing.. it was too spicy!
