Ingredients

  • 2 medium ciabatta rolls
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • 2 teaspoons fresh oregano, chopped
  • 2 tablespoons red wine vinegar
  • ½ teaspoon ground black pepper
  • 4 large, ripe tomatoes, cut into 1cm slices

  • 200g (7oz) tuna in oil, well-drained

Directions

  1. Pre-heat your oven to 200°C (400°F).

  2. Slice the ciabatta rolls in half lengthwise and lightly brush both sides with olive oil.

  3. In a small bowl, combine parsley, oregano, red wine vinegar, and black pepper.

  4. Place the ciabatta rolls cut side up on a baking sheet and brush the top lightly with the herb and vinegar mixture.

  5. Place the baking sheet into the preheated oven and bake for 5 minutes or until golden brown.

  6. Meanwhile, assemble the other ingredients on a large serving plate. Layer tomatoes, cucumber, olives and eggs on top of each other.

  7. Divide the tuna into four equal portions and place one portion onto each ciabatta roll.

  8. Once the ciabatta rolls are done baking, remove from oven and place onto the large serving plate.
