  • 120g tagliatelle (or other pasta of your choice)
  • 2 tablespoons butter
  • 2 cloves garlic (finely chopped)
  • 30g black truffle
  • 2 tablespoons of grated parmigiano-reggiano
  • 2 tablespoons fresh parsley (finely chopped)
  • 1 cup vegetable or chicken broth

Directions

  1. Bring a pot of water to a rolling boil and add a pinch of salt.

  2. Add the tagliatelle to the boiling water and cook for 7-8 minutes, stirring occasionally, or until al dente.

  3. Drain the pasta and reserve about 1/4 cup of the cooking liquid.

  4. Meanwhile, melt the butter in a skillet over medium heat and add the garlic. Cook until fragrant, about 30 seconds.

  5. Add the truffle and cook for another minute, stirring occasionally.

  6. Add the reserved cooking liquid and broth, stir, and bring to a simmer.

  7. Add the cooked pasta into the skillet and toss everything together for 1-2 minutes, until the sauce coats the pasta.

  8. Remove from heat and stir in the parmigiano-reggiano and parsley.

  9. Serve immediately and enjoy!
