Ingredients

  • 500g Arborio Rice
  • 750ml Vegetable Stock
  • 270ml White Wine
  • 2 tablespoons Olive Oil
  • 2 Onionsfinely chopped
  • 2 cloves garlicminced
  • 1 teaspoon Mixed Italian herbs
  • ½ teaspoon ground black pepper
  • Butter (non-salt)
  • Parmesan Cheese

Preparation

  1. Preheat oven to 350°F (177°C).
  2. Heat oil in a large skillet or pot over medium heat.
  3. Add onions and garlic and sauté until softened.
  4. Add Arborio rice and stir for a few minutes to coat the rice with the oil.
  5. Pour in the white winestir and let it cook for a couple of minutes.
  6. Reduce heat to low and add vegetable stock and herbs.
  7. Cover the pot and let simmer for 10 minutes.
  8. Transfer the risotto to an oven-proof dish.
  9. Sprinkle with Parmesan cheese and dot with butter.
  10. Bake for 20-25 minutesuntil risotto is cooked and the top is golden brown.
  11. Let it cool for a few minutes before serving.
