Oven Baked Falafels

Ingredients

  • 2 cups cooked chickpeas
  • 1/2 cup fresh parsley
  • 1/2 cup fresh cilantro
  • 1 small onion
  • 2 cloves of garlic
  • 2 tablespoons ground cumin
  • 1 teaspoon baking powder
  • 2 tablespoons olive oil
  • 2 tablespoons all-purpose flour

Instructions

  1. Preheat the oven to 375F (190C).
  2. In a food processorcombine the cooked chickpeasparsleycilantrooniongarliccuminbaking powderolive oiland all-purpose flour.
  3. Pulse until mixed together and a paste-like consistency is achieved.
  4. “Time to get your hands dirty! Do you want to use gloves? That’s OK too.”
  5. Take a handful of the mixture and shape it into a falafel patty.
  6. Place the patty on a lined baking tray.Continue this step with the remaining mixture.
  7. Bake in the oven for 20-25 minutes until golden brown.

Note: If you are having trouble shaping the falafels into pattiesyou can add a little bit more flour and a teaspoon of water to make it more malleable.
