Ingredients
- 4 veal shanks, 2 cm thick
- 4 tablespoons olive oil
- 200 g (1 cup) yellow onion, minced
- 4 cloves garlic, minced
- 500 ml (2 cups) white wine
- 500 ml (2 cups) vegetable broth
- 2 tablespoons tomato paste
- 2 carrots, chopped into 0.5 cm cubes
- 2 celery stalks, chopped into 0.5 cm cubes
- 2 bay leaves
- 1 teaspoon dried oregano
- 2 sprigs fresh thyme
- 2 stems fresh rosemary
- Salt
- Ground black pepper
Directions
- Preheat oven to 180 degrees C (350 F).
- Season veal shanks with salt and pepper.
- Heat olive oil in a large oven-safe pot over medium-high heat.
- Add veal shanks to the pot and brown for 3-4 minutes per side.
- Remove veal shanks and set aside.
- Reduce heat to medium. Add onions and garlic to the pot and cook for 3 minutes.
- Add white wine, broth, tomato paste, carrots, celery, bay leaves, oregano, thyme, and rosemary.
- Return veal shanks to the pot, making sure they are covered with liquid.
- Cover the pot and bake in the oven for 2-3 hours, or until the meat is tender.
- When done, remove veal shanks from the pot and let rest for 10 minutes.
- Serve with the cooking liquids and vegetables as a side.
