Ingredients

  • 2.5 litres of cold Water
  • 4 cm piece of Kombu seaweed
  • 1 - 1.5 tablespoons of Dashi
  • 3 thin fish cakes
  • 2 eggs
  • 2 large potatoes
  • 2 carrots
  • 2 medium onions
  • 2 mochi (or rice cakes)
  • 4 pieces aburage (deep-fried tofu)

Directions

  1. Start by gathering all the ingredients. For the potatoes, carrots and onions, dice them into small pieces no larger than 2 cm across.

  2. Bring the water to a boil in a large pot and add the Kombu. Let it simmer on low heat for 10 minutes.
  3. Add the dashi and the different vegetables, one by one, and let them cook for 15 minutes.
  4. Add the fish cakes, mochi and aburage, and let them simmer for another 10 minutes.
  5. Crack the eggs into the hot oden mixture. Cook for another 5 minutes.

  6. Serve the oden in a deep bowl. Enjoy!
