Ingredients

  • 1 onionchopped
  • 2 cloves garlicminced
  • 250g mushroomssliced
  • 1 teaspoon olive oil
  • 2 tablespoons tomato paste
  • 50g red lentils
  • 500ml vegetable stock
  • 1 teaspoon dried thyme
  • 250g potatoespeeled and cubed
  • 1 tablespoon vegan butter (or regular butter)
  • 100ml semi-skimmed milk
  • Freshly cracked black pepperto season
  • 25g vegan Cheddar (or regular Cheddar)

Directions

  1. Preheat oven to 200C/400F.
  2. In a large pan over medium heatsauté the onion and garlic in the oil until softenedabout 5 minutes. Add the mushrooms to the pan and sauté for another 5 minutes.
  3. Add the tomato paste and lentils to the pan and stir to combine. Pour in the vegetable stockstirring to combineand bring to a boil. Once boilingreduce heat and simmer for 10 minutes.
  4. Meanwhileplace the potatoes in a saucepan with enough water to just cover them. Bring to a boil and cook for 15 minutesor until fork tender.
  5. Remove the potatoes from the heatdrain and return to the saucepan. Add the vegan butter and milk and mash the potatoes until creamy. Season with freshly cracked pepper.
  6. Once the lentil mixture has finished cookingpour it into a large baking dish and spread out evenly.
  7. Top the lentil mixture with the mashed potato and spread out evenly. Sprinkle the top with the vegan cheddar cheese.
  8. Bake in the preheated oven for 15 minutesor until golden brown.
  9. Let cool for a few minutes before serving and try to not eat it all in one go!

Tip

For an extra cheesy toppingsprinkle with extra vegan cheddar cheese before baking.
