  • 500g chicken thighs, boneless and skinless
  • 1 onion, sliced
  • 2 carrots, sliced
  • 1 leek, sliced
  • 1/2 napa cabbage, chopped
  • 200g shiitake mushrooms, sliced
  • 4 cups chicken broth
  • 2 cloves of garlic, minced
  • 1 thumb-sized piece of ginger, grated
  • 1 tablespoon soy sauce
  • 1 tablespoon sake
  • 1 tablespoon mirin
  • 1 tablespoon cornstarch
  • 2 green onions, chopped

Directions

  1. Start by preparing all your ingredients. Cut the chicken thighs into bite-sized pieces, slice the onion, carrots, leek, and shiitake mushrooms, chop the napa cabbage, mince the garlic, and grate the ginger.
  2. In a large pot, combine the chicken broth, garlic, ginger, soy sauce, sake, and mirin. Bring it to a boil over medium heat.
  3. Add the chicken thighs to the pot and let them cook for about 5 minutes.
  4. Next, add the sliced vegetables (onion, carrots, leek, napa cabbage, and shiitake mushrooms) to the pot. Let everything simmer for another 10-15 minutes until the vegetables are tender and the chicken is cooked through.
  5. In a small bowl, mix the cornstarch with a bit of water to create a slurry. Slowly pour the slurry into the pot while stirring constantly to thicken the broth.
  6. Once the broth has thickened, sprinkle the chopped green onions on top and give it a good stir.
