Ingredients

  • 2–3 tablespoons of cooking oil
  • 1 teaspoon fresh, shredded ginger
  • 1 clove of garlic minced
  • 1 piece of kelp
  • 6 cups of chicken broth
  • ½ cup of sake
  • 2 tablespoons of mirin
  • 6 ounces of extra-firm tofu, cut into cubes
  • 1 medium-sized carrot, julienned
  • 1 leek, washed and julienned
  • 2 Japanese mushrooms, wiped clean and thinly sliced
  • 2 zucchini, julienned
  • 2-3 chicken thighs, cleaned and diced
  • 2-3 individual white fish fillets
  • 2 sheets of toasted nori
  • ¼ cup of miso paste

Directions

  1. In a large pot, heat the cooking oil over medium-high heat.
  2. Once hot, add the ginger, garlic and kelp and sauté for a few minutes until fragrant.
  3. Add the chicken broth, sake and mirin to the pot and bring to a gentle simmer.
  4. Add the tofu and all of the vegetables, except the miso past, to the pot and simmer for 10 minutes.
  5. Add the chicken and fish to the pot and continue to simmer for another 10 minutes.
  6. Add the toasted nori and miso paste to the pot and simmer for an additional 10 minutes.
  7. To serve, ladle the Mizutaki out of the pot, making sure to give each diner two pieces of chicken, two pieces of fish and a bit of every vegetable.

Complete this Japanese-inspired meal with a side of white rice, a small salad of cucumber, radishes, and carrots, and a clever joke or two!
