Ingredients

  • 2 large Oreos (around 150 grams) of your favorite flavor, crushed
  • 4 tablespoons of butter, melted
  • 75 grams of peanut butter
  • 40 grams of cocoa powder
  • 250 millilitres of single cream
  • 20 grams of icing sugar
  • 2 tablespoons of cornstarch
  • 130 grams of chopped dark chocolate
  • 250 millilitres of double cream
  • 5 millilitres of vanilla extract

Directions

  1. Preheat your oven to gas mark 4 (180°C) and prepare an 8-inch (25 cm) springform cake tin.

  2. In a medium bowl, combine the crushed Oreos and melted butter together. Spoon into the springform cake tin, spreading it out evenly to form the crust. Place the tin in the preheated oven and bake for 7 minutes until the crust is golden-brown. Take out of the oven and set aside.

  3. In a medium-sized saucepan, combine the peanut butter, cocoa powder, single cream, icing sugar and cornstarch. Heat it over a medium heat for 4-5 minutes, stirring continuously until all of the ingredients are fully combined and the mixture is thickened.

  4. Remove from the heat and add the chopped dark chocolate. Stir until the chocolate is fully melted and combined, then take off the heat.

  5. Now, in a separate bowl, combine the double cream and the vanilla extract together. Beat until you get soft peaks.

  6. To assemble your pie, start by spreading the chocolate filling over the Oreo crust. Top with the whipped cream.

  7. Place in the fridge for 15 minutes, and that’s it! Enjoy your delicious Mississippi Mud Pie with your family.

This Mississippi Mud Pie goes well with some homemade vanilla ice cream or even a scoop of whipped cream. Kids will especially enjoy adding their favorite candies or sprinkles on top of the pie.
