Ingredients

  • 4 cups of Dashi*
  • 4 tablespoons of Miso Paste
  • ½ cup of diced Tofu
  • ½ cup of diced Katso-Ni**
  • 2 stalks of chopped Green Onions

*Dashi is a Japanese soup stock made with Kombu (seaweed) and Bonito (dried fish flakes).

**Katso-Ni is Japanese braised vegetables, usually made with carrots, burdock root, and shiitake mushrooms.

Directions

  1. Start by preparing the Dashi. In a pot over medium heat, bring 4 cups of water to a gentle simmer. Add the Kombu and let it steep for 10 minutes.

  2. After 10 minutes, turn the heat off and add the Bonito flakes. Stir it gently and let it steep for another 10 minutes.

  3. Strain the Dashi through a fine-mesh sieve. Discard the Kombu and Bonito flakes.

  4. Place the Dashi back in the pot and turn the heat back on to medium. When the Dashi begins to simmer, add in the Miso Paste. Stir the Miso paste until it is completely combined with the liquid.

  5. Add the tofu and Katso-Ni to the soup and stir them in. Simmer everything for 5 minutes.

  6. Turn the heat off and add the green onions. Give them a quick stir.

  7. Ladle the soup into bowls and serve. Enjoy!
