Ingredients
- 4 tablespoons of white miso
- 4 cups of dashi (made with 6* g of bonito flakes, 8 cups of water and 2 tablespoons of kelp)
- 1 tablespoon of mirin
- 60 g of silken tofu, diced
Directions
- Preparing the broth:
- Place the bonito flakes, water and kelp in a saucepan and slowly bring to a boil.
- Once it has begun to boil, turn off the heat, cover and let it sit for 5 minutes.
- Strain the broth to discard the bonito flakes and kelp.
- Bring the strained broth back to a boil.
- Making the miso:
- Add the white miso paste to the boiling broth and stir until it’s fully dissolved. * Add mirin and tofu and let it simmer for 5 minutes.
- Serve in individual bowls. You can add chives or parsley for a nice touch.
Recommended Sides
Miso soup makes a great meal when accompanied by rice and a light vegetable side dish, like steamed broccoli. You can also serve some miso-glazed edamame or baked sweet potato wedges to make the meal more complete. Yum!
