Ingredients

  • 1 cup dried moong beans (200g)
  • 1 teaspoon vegetable oil (5ml)
  • 1 tablespoon mung dal (15g)
  • 1/2 teaspoon mustard seeds (2.5ml)
  • 1/2 teaspoon cumin seeds (2.5ml)
  • 1/2 cup finely chopped onions (100g)
  • 1/2 teaspoon ginger paste (2.5ml)
  • 1/2 teaspoon garlic paste (2.5ml)
  • 1/2 teaspoon turmeric powder (2.5ml)
  • 1/4 teaspoon chilli powder (1.25ml)
  • 1/4 teaspoon dried mango powder (1.25ml)
  • 2 tablespoons finely chopped coriander leaves (30ml)
  • 4 small buns/pavs (200g)
  • 1 onion finely sliced (100g)
  • 2 tablespoons oil (30ml)
  • 2 cups water (500ml)
  • Salt to taste
  • 1/2 teaspoon sugar (2.5ml)

Directions

  1. Soak the moong beans in the water overnight.
  2. In a pan heat the vegetable oil over medium heat and add the mung dal.
  3. Toast the mung dal until it starts to turn golden.
  4. Add the mustard and cumin seeds and stir.
  5. Add the onion and sauté until it turns translucent.
  6. Add the ginger and garlic paste and sauté for 1 minute.
  7. Add the turmeric powder chilli powder and dried mango powder and stir.
  8. Add the soaked moong beans and 2 cups of water and simmer for 10 minutes.
  9. Add salt to taste and sugar and mix in the coriander leaves and stir.
  10. Take the pan off the heat and let it cool.
  11. Slice the buns open from the top.
  12. In a pan or a griddle heat the 2 tablespoons of oil over medium heat and add the onion slices.
  13. Fry the onion until it’s golden and crispy.
  14. Assemble the buns with the misal mixture and top with fried onions.
  15. Serve hot with a smile!
