Ingredients
- 2 x 400g cans of chickpeas, drained
- 2 tablespoons of olive oil
- 2 cloves of garlic, finely chopped
- 2 small onions, finely chopped
- a handful of spinach, chopped
- a pinch of ground black pepper
- 1 litre of vegetable stock
- 1 tablespoon of fresh lemon juice
- 1 sprig of fresh rosemary, finely chopped
Directions
- Heat the olive oil in a large saucepan over medium heat.
- Add the garlic and onion and cook for a few minutes until the vegetables are softened.
- Add the chickpeas and stir to combine. Cook for a few more minutes.
- Add the vegetable stock, black pepper and rosemary sprigs. Bring to the boil and reduce the heat to low. Simmer for 10 minutes.
- Add the spinach and lemon juice and simmer for an additional 5 minutes.
- Use a hand blender** to blend the soup until it reaches your desired consistency. Make sure to blend cautiously and supervise when appropriate.
- Once the soup is blended, serve and enjoy!
