Ingredients

  • 2 x 400g cans of chickpeas, drained
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, finely chopped
  • 2 small onions, finely chopped
  • a handful of spinach, chopped
  • a pinch of ground black pepper
  • 1 litre of vegetable stock
  • 1 tablespoon of fresh lemon juice
  • 1 sprig of fresh rosemary, finely chopped

Directions

  1. Heat the olive oil in a large saucepan over medium heat.
  2. Add the garlic and onion and cook for a few minutes until the vegetables are softened.
  3. Add the chickpeas and stir to combine. Cook for a few more minutes.
  4. Add the vegetable stock, black pepper and rosemary sprigs. Bring to the boil and reduce the heat to low. Simmer for 10 minutes.
  5. Add the spinach and lemon juice and simmer for an additional 5 minutes.
  6. Use a hand blender** to blend the soup until it reaches your desired consistency. Make sure to blend cautiously and supervise when appropriate.
  7. Once the soup is blended, serve and enjoy!
