Ingredients
- 3 tablespoons of olive oil
- 2 cloves of garlic, minced
- 4 tablespoons of mentaiko, halved in size for children (choking hazard precaution)
- 3 tablespoons of butter
- 2 cups of spaghetti or linguine pasta, cut into 1-inch pieces
- 1/2 cup of parmesan cheese, grated
- 2 tablespoons of parsley, chopped
Directions
- Heat the olive oil in a pan over medium heat and add the garlic.
- Once the garlic has turned bright golden, add the mentaiko and butter. Stir slowly and evenly until the mentaiko starts to brown.
- Bring a pot of salted water to a boil and add in the spaghetti or linguine pasta. Boil for 8 minutes or until the pasta is al dente.
- Once the pasta is done, drain the water and add the pasta to the pan with the mentaiko. Stir to ensure it’s evenly coated.
- Turn off the heat and slowly add the parmesan cheese and parsley, stirring continuously.
- Serve the Mentaiko pasta hot with a sprinkle of parmesan cheese and parsley, and get ready to hear your kids exclaim “Wow, this pasta is delicious!”
