Ingredients
- 400 gms mushrooms of your choice, sliced
- 400 gms fresh or frozen peas
- 2 big onions, diced
- 2 tablespoons of vegetable oil
- 1 tablespoon of freshly grated ginger
- 3-4 cloves of freshly minced garlic
- 2 teaspoons of ground coriander
- 1 teaspoon of ground cumin
- 1 teaspoon of turmeric powder
- 1/2 teaspoon of garam masala
- 1/2 teaspoon of dried fenugreek leaves
- Juice of 1 lemon
- Salt to taste
Directions
- Heat the vegetable oil in a large pan over medium-high heat.
- Once the oil is hot, add the diced onions and fry them until they are lightly golden. Keep an eye on them so they don’t burn!
- Add the ginger and garlic and fry for about a minute.
- Add the mushrooms, ground coriander, ground cumin, turmeric powder, garam masala, and dried fenugreek leaves (Ooh La La! In French, this is called Feuilles de Fenugrec!). Fry for a few minutes until the mushrooms are lightly cooked.
- Add the fresh or frozen peas, lower the heat to medium and cook for another 5-6 minutes.
- Add the lemon juice and season with salt to taste.
- Cook for another 5-7 minutes until the vegetables are cooked through.
Recommended Sides
This Matar Mushroom is best served with some steamed basmati rice or chapatis. It also goes very well with a side of raita or a salad. Enjoy!
