Ingredients

  • 120g macaroni pasta
  • 250ml milk
  • 2 tablespoons butter
  • 1 tablespoon plain flour
  • 1/2 teaspoon mustard powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon ground nutmeg
  • 250g grated cheddar cheese
  • Salt and pepper to taste

Directions

  1. Preheat oven to 200C.
  2. Bring a large pot of salted water to a boil.
  3. In a small saucepan melt butter over medium heat.
  4. Add the flour to the butter and stir until it becomes a paste.
  5. Add the milk and whisk for about 2 minutes until it is smooth.
  6. Add the mustard powder, garlic powder, nutmeg and season with salt and pepper to taste.
  7. Simmer until the sauce thickens and allow to cool slightly.
  8. Once the sauce has cooled, stir in the grated cheese until it is melted and combined.
  9. Add the macaroni to the boiling water and cook according to package directions.
  10. Once the macaroni is cooked, drain it and pour it into a large bowl.
  11. Add the cheese sauce to the macaroni and mix until everything is evenly combined.
  12. Pour the macaroni and cheese into an oven-safe dish.
  13. Bake for 20 minutes until the top is golden and the cheese is bubbling.
