Ingredients

  • 300g of macaroni
  • 2 tablespoons of butter
  • 2 cloves of garlic, finely chopped
  • 250g of frozen vegetables (e.g. carrots, peas, and corn)
  • ½ teaspoon of dried oregano
  • 375 ml of vegetable stock or white wine
  • 150g of grated cheese
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 200°C.

  2. Bring a large pot of water to a boil. Once boiling, add the macaroni and cook according to the packet instructions.

  3. Whilst the macaroni is cooking, melt the butter in a medium-sized saucepan over medium heat. Add the garlic and sauté for 1-2 minutes, stirring frequently.

  4. Add the frozen vegetables and oregano, stirring to combine. Cook for 5 minutes until the vegetables are cooked through.

  5. Add the vegetable stock or white wine to the pan and bring to a simmer. Simmer for 5 minutes.

  6. Drain the cooked macaroni and add it to the saucepan with the vegetables. Stir to combine.

  7. Pour the macaroni and vegetable mixture into a baking dish. Sprinkle with grated cheese.

  8. Place the baking dish in the preheated oven and bake for 20 minutes.

  9. Take the dish out of the oven and let cool for 5 minutes. Serve warm and enjoy!
