Macaronade

Ingredients
- 300g of macaroni
- 2 tablespoons of butter
- 2 cloves of garlic, finely chopped
- 250g of frozen vegetables (e.g. carrots, peas, and corn)
- ½ teaspoon of dried oregano
- 375 ml of vegetable stock or white wine
- 150g of grated cheese
- Salt and pepper to taste

Preheat the oven to 200°C.

Bring a large pot of water to a boil. Once boiling, add the macaroni and cook according to the packet instructions.

Whilst the macaroni is cooking, melt the butter in a medium-sized saucepan over medium heat. Add the garlic and sauté for 1-2 minutes, stirring frequently.

Add the frozen vegetables and oregano, stirring to combine. Cook for 5 minutes until the vegetables are cooked through.

Add the vegetable stock or white wine to the pan and bring to a simmer. Simmer for 5 minutes.

Drain the cooked macaroni and add it to the saucepan with the vegetables. Stir to combine.

Pour the macaroni and vegetable mixture into a baking dish. Sprinkle with grated cheese.

Place the baking dish in the preheated oven and bake for 20 minutes.

Take the dish out of the oven and let cool for 5 minutes. Serve warm and enjoy!
