Bring a large pot of water to a boil. Add macaroni and cook for 7 minutes or according to instructions on the packet, stirring occasionally until it reaches al dente (cooked but still with a bit of crunch). Drain, return to the pot and keep warm. 2. Whilst the macaroni is cooking, cut up the cheese into small cubes to ensure it’s not a choking hazard. 3. In a large saucepan, melt the butter and olive oil over medium-low heat. 4. Once the butter has melted, add the flour and whisk until combined. 5. Slowly add the milk and whisk until smooth. 6. Let the mixture bubble until thickened and then add your favourite spices and herbs. 7. Now that the sauce has thickened, reduce the heat to low and stir in the cheese cubesstirring until the cheese has melted. 8. Add the sauce to the pot of cooked pasta and stir over low heat for 2–3 minutes or until the pasta is completely coated with the sauce. 9.
