Ingredients

  • 2 medium carrots
  • 2 celery stalks
  • 1/2 red bell pepper
  • 1/2 yellow bell pepper
  • 1/2 cup green beans (in small pieces)
  • 1/2 cup corn (frozen and thawed)
  • 2 tablespoons vegetable oil
  • 1 teaspoon mustard
  • 1 teaspoon freshly squeezed lemon juice
  • Salt and pepper to taste

Directions

  1. Begin by prepping all of your vegetables. Start with the carrots - peel the outside skin off and then cut them into half-inch cubes.
  2. Rinse the celery stalks under running water and cut into half-inch cubes.
  3. Cut the bell peppers in half, remove the seeds, and then also cut into half-inch cubes.
  4. The green beans should be cut into 1/4-inch pieces.
  5. The corn should be thawed before adding to the dish.
  6. Heat the oil in a large skillet over medium heat and then add all of the vegetables.
  7. Cook for about 10 minutes, stirring frequently to prevent any of the vegetables from burning.
  8. Add the mustard, lemon juice, salt, and pepper.
  9. Lower the heat to low and cook for an additional 5-7 minutes, stirring occasionally.
  10. When the vegetables are done, remove from the heat and let cool before serving.
