Ingredients

  • 2 cups chickpea flour
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon garlic, minced
  • 1 teaspoon fennel
  • 2 teaspoons carom seeds
  • 2 tablespoons vegetable oil
  • 11/2 cups water
  • 2 teaspoons chilli powder
  • 1/2 teaspoon coriander powder
  • pinch of salt
  • 2 large potatoes, boiled
  • 2 large tomatoes, boiled
  • 2 tablespoons coriander leaves, chopped
  • 2 tablespoons ginger, grated

Directions

  1. In a medium bowl, mix together the chickpea flour, turmeric powder, garlic, fennel, carom seeds, vegetable oil, water, chilli powder, coriander powder, and salt until combined.
  2. Divide the mixture into eight equal parts. Use your hand to form each part into a small ball.
  3. Heat a large skillet over medium heat and add the balls. Cook for 10-15 minutes, or until lightly browned on all sides.
  4. Boil the potatoes and tomatoes in a separate pot. Once cooked, gently mash them together in a bowl. Add the chopped coriander leaves and grated ginger to the mashed potatoes and tomatoes.
  5. To assemble the Litti Chokha, break open one ball and fill it with the mashed potato and tomato mixture. Pinch the ball closed and gently press the ball to flatten it. Repeat with the remaining balls.
  6. Heat a large skillet over medium heat. Add the filled balls and cook for 5 minutes, or until lightly browned.
  7. Serve the Litti Chokha warm with your favorite chutney or raita.
