Ingredients:

  • 1/2 onion, diced
  • 1 stalk of celery, diced
  • 20 ounces dried vegetable broth
  • 1 tablespoon white wine
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 2 cups dried red lentils
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 2 cups chopped fresh spinach

Directions:

  1. Heat olive oil in a large soup pot over medium heat.
  2. Add onion and celery, cook until softened, about 4 minutes.
  3. Add garlic and stir continuously for 1 minute.
  4. Add white wine and cook for an additional 1 minute.
  5. Add dried vegetable broth, lentils, cumin, coriander, and turmeric.
  6. Bring to a boil, reduce heat and simmer for 15 minutes.
  7. Add chopped spinach and simmer an additional 5 minutes.
  8. Serve Linsensuppe with a smile. “Soup’s on!”
