Ingredients:

  • 8 chicken thighs - boneless and skinless (500g)
  • 4 lemons
  • 2 cloves garlic - finely chopped (10g)
  • 2 tablespoons olive oil (30ml)
  • 2 tablespoons fresh oregano leaves (10g)
  • 1 teaspoon ground black pepper (2g)
  • 1/4 teaspoon paprika (0.5g)

Instructions:

  1. Preheat your oven to 180C (356F).
  2. Place the chicken thighs in a baking tray.
  3. Peel the lemons and cut them in half. Juice one of the lemon halves and reserve the juice.
  4. In a small bowl, mix the garlic oregano black pepper and paprika.
  5. Rub the spice mixture onto the chicken thighs.
  6. Drizzle the olive oil and lemon juice onto the chicken thighs, and place the lemon halves on top.
  7. Bake the chicken for about 50 minutes, or until it is golden and the juices run clear.
  8. Serve the lemon chicken with a side salad and a joke:

    Why did the chicken go to the SPA? To get a little CLUCKY!
