Ingredients

  • 4 Cucumbers (450g), chopped into small pieces
  • 4 Roma Tomatoes (340g), chopped into small pieces
  • 1 Green Pepper (90g), chopped into small pieces
  • 2 tablespoons (30ml) Olive Oil
  • 1 Lemon (90g), juiced
  • 2 heads of Romaine Lettuce (500g), chopped
  • 2 tablespoons (10g) Mint, chopped
  • 2 cloves Garlic (10g), minced
  • 1/4 teaspoon (1.25ml) black pepper
  • 2 tablespoons (30g) Sumac
  • 2 tablespoons (30ml) Pomegranate Molasses

Directions

  1. Begin by prepping all the vegetables. Chop the cucumbers, tomatoes, green pepper, and lettuce into small pieces and set aside. Mince the garlic and set aside.

  2. In a large bowl, whisk together the olive oil, lemon juice, garlic, black pepper, and sumac until they are fully combined.

  3. Add the chopped vegetables to the bowl and gently mix together.

  4. Transfer the mixture to a large serving platter or individual plates.

  5. Sprinkle the mint over the salad and drizzle with the pomegranate molasses.

  6. Serve and enjoy!
