Ingredients

  • 500g Lauki (Bottle Gourd)
  • 300ml Vegetable Oil
  • 250g All Purpose Flour (Maida)
  • 75g Sooji (semolina)
  • 250g Sugar
  • 2tsp Cardamom Powder
  • 10-12 Raisins
  • 5 Cashew Nuts
  • 2 drops of Kewra Water (a fragrant extract of flowers)

Directions

  1. Start by peeling the skin of the lauki and then grate it until you get around 4 cups of grated lauki.
  2. Heat a pan on medium heat, add oil and let it get hot.
  3. Once the oil is hot, add all purpose flour (maida) and stir continuously.
  4. When the flour starts to brown, add sooji to it and mix well. Lower the flame and cook for another 5 mins or until the flour turns golden-brown.
  5. Now add the grated lauki, sugar, cardamom powder, raisins and cashew nuts and mix everything well.
  6. Increase the flame to medium-high and stir continuously.
  7. After 5 mins or so, the lauki will start to soften. At this point, reduce the flame to low and cover the pan.
  8. Let the halwa cook for about 15 minutes, stirring occasionally.
  9. After 15 minutes, the halwa should be ready. Add a drop of Kewra water for fragrance, stir one final time and turn off the flame.
