Ingredients

  • 250g lasagna sheets
  • 500g ground beef
  • 1 clove minced garlic
  • 2 tsp olive oil
  • 2 cans of diced tomatoes (540g each can)
  • 2 cups of grated mozzarella cheese
  • 1 cup of grated parmesan cheese
  • 2 cups of cooked spinach
  • 1 medium onion, diced
  • 1 tsp dried oregano
  • 2 tsp dried basil

Directions

  1. Preheat oven to 400F (200C).
  2. In a large saucepan, heat olive oil on medium-high heat and add onions and minced garlic. Saute until the onions are translucent.
  3. Add the ground beef to the pan and cook until brown. Joke time: If you don’t hear a sizzle when the beef hits the pan, your pan must be singing the blues!
  4. Add the 2 cans of diced tomatoes and spices and bring to a simmer. Simmer for 10 minutes, stirring often.
  5. Prepare the lasagna sheets according to package instructions. Depending on the sheets you choose, the instructions may require you to pre-cook the noodles before layering the lasagna.
  6. Grease a 9x13 casserole dish lightly with olive oil or non-stick spray.
  7. Layer the lasagna as follows: Meat sauce, lasagna sheets, spinach, mozzarella cheese, parmesan cheese, meat sauce.
  8. Repeat layering until you reach the top of the dish.
  9. Finish off with a layer of meat sauce and top with the remaining mozzarella cheese and parmesan cheese.
  10. Cover the lasagna with aluminum foil and bake for 30 minutes.
  11. After 30 minutes, remove the aluminum foil and bake for another 10-15 minutes, or until the cheese is golden brown.
  12. Remove from oven, store, and let cool for at least 10 minutes.

Recommended Sides
