Ingredients

  • 500g diced lamb
  • 1 onion, finely chopped
  • 2 carrots, peeled and diced
  • 2 cloves of garlic, minced
  • 400ml low-sodium beef broth
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 200g dried apricots, chopped
  • 2 tbsp cornstarch
  • 2 tbsp cold water

Directions

  1. In a large pot, heat some oil over medium heat. Add the diced lamb and cook until browned on all sides. This will take about 5 minutes.
  2. Add the chopped onion, diced carrots, and minced garlic to the pot. Cook for another 5 minutes, stirring occasionally.
  3. Pour in the low-sodium beef broth and add the dried thyme and paprika. Bring the stew to a boil, then reduce the heat and let it simmer for 45 minutes.
  4. Stir in the chopped dried apricots and continue to simmer for another 15 minutes, or until the lamb is tender.
  5. In a small bowl, mix the cornstarch with cold water to make a slurry. Slowly pour this into the stew while stirring continuously. This will thicken the stew slightly.
  6. Serve the lamb and apricot stew hot, with a side of mashed potatoes or crusty bread.
