Ingredients

  • 400g diced potatoes
  • 1 large onion
  • 2 cloves of garlic
  • 2 tablespoons vegetable oil
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon garam masala
  • 1/4 teaspoon turmeric
  • 2 tablespoons tomato puree
  • 2 tablespoons nut butter
  • 1/2 teaspoon chilli powder
  • 200ml coconut milk
  • Salt and pepper to taste
  • 4 tablespoons chopped fresh coriander leaves

Ingredients:

  • 300g minced lamb
  • 1 onion, finely chopped
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon ground cumin
  • 2 tablespoons fresh chopped coriander
  • 2 tablespoons potato flour
  • 2 tablespoons breadcrumbs
  • 2 tablespoons vegetable oil

Directions

  1. Begin by preparing the kofta. Place the minced lamb in a bowl and season with the garam masala, ground cumin, chopped coriander and potato flour. Combine the ingredients until it forms a paste.
  2. Divide the mixture into small balls and roll each one in breadcrumbs.
  3. Heat the vegetable oil in a pan and fry the kofta until golden brown. Set aside.
  4. Peel and dice the potatoes and place them in a saucepan of boiling water. Cook for 10 minutes until tender then place aside and keep warm.
  5. In a separate saucepan, heat the vegetable oil and add the chopped onion and garlic. Cook for 5 minutes or until lightly browned.
  6. Add the ground coriander, ground cumin and garam masala and stir for 2 minutes.
  7. Add the tomato puree and nut butter and stir until combined.
  8. Gradually add the coconut milk and stir until it forms a thick sauce.
  9. Add the cooked potatoes and kofta to the sauce and simmer for 15 minutes or until the sauce has thickened.
  10. Finally add salt and pepper to taste and garnish with fresh coriander.

Recommended Sides
