Ingredients

  • 350 g of all-purpose flour
  • 200 g of melted and cooled unsalted butter
  • 65 g of confectioners’ sugar
  • 2 egg yolks
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of nutmeg
  • 4 teaspoons of freshly-squeezed lime juice
  • 315 g (2 cans) of sweetened condensed milk
  • 1 teaspoon of lime zest
  • 9g of gelatine
  • 50 ml of water

Directions

  1. Preheat your oven to 340°F (170°C).
  2. In a bowl, mix the flour, baking powder, baking soda, and nutmeg. Then, add the cooled butter, confectioners’ sugar, vanilla, and egg yolks.
  3. Mix the ingredients until everything forms a crumbly, dough-like texture.
  4. Grease a 9-inch pie dish and evenly spread the dough all over the bottom in the dish.
  5. Bake the pie crust in the preheated oven for 15 minutes, or until the edges are golden brown.
  6. Meanwhile, prepare the filling. In a separate bowl, mix the condensed milk, lime juice, and lime zest until fully incorporated.
  7. In a separate bowl, add the gelatine powder and water, and let it sit for at least 5 minutes to soften.
  8. Add the softened gelatine mixture to the condensed milk mixture and beat until fully combined.
  9. Once the crust is ready, let it cool completely before pouring in the filling.
  10. Pour the filling mixture over the cooled pie crust and bake in the preheated oven for 15-20 minutes, or until the top is golden brown.
  11. Allow the pie to cool completely before serving, at least 4 hours in the refrigerator. Enjoy!
