Ingredients
- 350 g of all-purpose flour
- 200 g of melted and cooled unsalted butter
- 65 g of confectioners’ sugar
- 2 egg yolks
- 1 teaspoon of vanilla extract
- 1/4 teaspoon of baking powder
- 1/2 teaspoon of baking soda
- 1/4 teaspoon of nutmeg
- 4 teaspoons of freshly-squeezed lime juice
- 315 g (2 cans) of sweetened condensed milk
- 1 teaspoon of lime zest
- 9g of gelatine
- 50 ml of water
Directions
- Preheat your oven to 340°F (170°C).
- In a bowl, mix the flour, baking powder, baking soda, and nutmeg. Then, add the cooled butter, confectioners’ sugar, vanilla, and egg yolks.
- Mix the ingredients until everything forms a crumbly, dough-like texture.
- Grease a 9-inch pie dish and evenly spread the dough all over the bottom in the dish.
- Bake the pie crust in the preheated oven for 15 minutes, or until the edges are golden brown.
- Meanwhile, prepare the filling. In a separate bowl, mix the condensed milk, lime juice, and lime zest until fully incorporated.
- In a separate bowl, add the gelatine powder and water, and let it sit for at least 5 minutes to soften.
- Add the softened gelatine mixture to the condensed milk mixture and beat until fully combined.
- Once the crust is ready, let it cool completely before pouring in the filling.
- Pour the filling mixture over the cooled pie crust and bake in the preheated oven for 15-20 minutes, or until the top is golden brown.
- Allow the pie to cool completely before serving, at least 4 hours in the refrigerator. Enjoy!
