Ingredients

  • 4 potatoes (about 600 g), peeled and chopped into small cubes
  • 2 carrots (about 250 g), peeled and diced
  • 1 onion (about 120 g), peeled and finely chopped
  • A pinch of white pepper
  • 2 tablespoons of vegetable oil
  • 2 liters of hot vegetable stock (or water)
  • 2 tablespoons of freshly chopped parsley

Directions

  1. Preheat your oven to 200 degrees Celsius.
  2. Place the potatoes, carrots, onion in an oven-safe dish. Pour the oil and white pepper over and mix everything together so the vegetables are lightly coated.
  3. Place the oven-safe dish in the preheated oven and bake for 30 minutes until everything is tender.
  4. Transfer the vegetables from the oven-safe dish to a large pot and pour the stock (or water) overtop.
  5. Simmer the soup on medium heat for 10 minutes then reduce the heat and let it continue to simmer for another 10 minutes.
  6. Add the chopped parsley, stir everything together then let the soup simmer for a final five minutes.

  8. Ladle out servings into individual bowls and enjoy!
