  • 500g of boneless, skinless chicken thighs
  • 30g white miso paste
  • 4 cloves of garlic, minced
  • 2 tablespoons of sake
  • 2 tablespoons of light soy sauce
  • 2 teaspoons of honey
  • 2 teaspoons of grated fresh ginger
  • 2 tablespoons of potato starch
  • Vegetable oil, for frying

Directions

  1. First, you’ll need to prepare the marinade for the chicken. In a bowl, mix together the miso paste, minced garlic, sake, light soy sauce, honey, and grated ginger until everything is combined.

  2. Next, coat your chicken in the marinade and let it sit for at least 30 minutes.

  3. After the chicken has marinated, it’s time to prep for frying. Place your potato starch in a shallow dish and coat each piece of chicken in it.

  4. In a large skillet, heat about 1/2-inch of vegetable oil over medium-high heat. Once the oil has heated up, carefully add your chicken to the skillet and fry each side for 3-4 minutes, or until the karaage is golden brown.

  5. Once the karaage is done cooking, remove from the skillet and place on a plate lined with a paper towel to absorb any excess oil.

Karaage goes great with a side of steamed rice served together with a salad and some pickles. And why not have some fun with it too! Serve your karaage in tiny little boats decorated with seaweed sails and little orange fish flagged toothpicks. Your kids will think it’s sushi-rific!
