Ingredients

  • 2 chicken breasts
  • 2 tablespoons plain flour
  • 2 tablespoons cornstarch (cornflour)
  • ¼ teaspoon baking powder
  • A pinch of grated ginger
  • 2 tablespoons soy sauce
  • 2 tablespoons mirin
  • 1 teaspoon sake
  • 2 teaspoons vegetable oil
  • 2 slices white bread
  • 2 tablespoons mayonnaise
  • 1/2 medium carrot, cut into matchsticks
  • 1/2 small cucumber, cut into matchsticks

Directions

  1. In a large bowl, combine the chicken, flour, cornstarch, baking powder, ginger, soy sauce, mirin, and sake. Mix until the chicken is thoroughly coated.

  2. Heat the oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken and fry for about 10 minutes, flipping once or twice, until golden and cooked through.

  3. Toast the bread, spread each slice with mayonnaise, then top with the chicken.

  4. Arrange the carrot and cucumber matchsticks on top of the chicken.

  5. Let cool for a few minutes, then serve your Karaage Sando!
