Ingredients

  • 200 grams of Udon Noodles
  • 2 tablespoons of sesame oil
  • 2 tablespoons of soy sauce
  • 2 tablespoons of mirin
  • 2 cloves of garlic, finely chopped
  • 3 pieces of kombu seaweed
  • 2 tablespoons of katsuobushi
  • 2 tablespoons of Sake
  • 2 tablespoons of miso paste
  • 500 millilitres of water

Directions

  1. Begin by boiling a large pot of water.

  2. Once the water has come to a boil, add the Udon noodles and cook for 5-7 minutes, or until the noodles are al dente.

  3. Drain the noodles and set aside.

  4. In a separate pan, heat the sesame oil over medium heat.

  5. Add the garlic and sauté for about a minute, until fragrant.

  6. Add the kombu seaweed and katsuobushi and continue to sauté for another minute.

  7. Add the sake, mirin, and soy sauce and cook for another minute.

  8. Add the miso paste and whisk until smooth and combined.

  9. Add the water to the pan and cook for another 5 minutes.

  10. Finally, add the cooked noodles and toss to coat.

  11. Serve warm, with a side of your choice. Tada! Your Kara Udon is ready for the little ones!
