Ingredients

  • 1 large red onion, diced
  • 2 medium tomatoes, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of roasted cumin
  • 1 teaspoon of coriander seed
  • 1 teaspoon of minced ginger
  • 1/2 teaspoon of chili powder
  • 1/2 teaspoon of turmeric
  • 1/2 teaspoon of garam masala
  • 1/2 teaspoon of black mustard seeds
  • 2 tablespoons of vegetable oil
  • 1/2 cup of plain Greek yogurt
  • 1/4 cup of roasted cashews, chopped

Directions

Step 1: Begin by prepping all of the vegetables: mince the garlic, dice the tomatoes, and dice the onion. Set aside.

Step 2: In a medium pan, heat two tablespoons of vegetable oil over medium heat. Once it is hot, add the garlic. Cook for 30 seconds before adding the mustard seeds, cumin, coriander, ginger, chili powder, turmeric and garam masala. Cook for an additional two minutes.

Step 3: Add the diced onion to the pan and cook over medium heat for five minutes.

Step 4: Add the diced tomatoes and cook for an additional five minutes. (I can already smell the deliciousness! Can’t you?)

Step 5: Remove the pan from the heat and allow it to cool for 10 minutes.

Step 6: Add the cooled mixture to a blender, along with the Greek yogurt and cashews. Blend until a thick paste-like consistency is achieved.

Step 7: Transfer the chutney to a serving dish and serve with your favorite snack or appetizers. Enjoy!

Kara Chutney is best served with crunchy crudite, naan, crackers, or pita chips.
