Ingredients

  • 2 medium sweet potatoes, peeled
  • 4 cups of kale
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 2 teaspoons ground black pepper

Directions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. Peel and dice the sweet potatoes into 1 inch cubes and add them to the baking sheet.
  3. Wash and remove the stems of the kale leaves, then tear the kale into small pieces.
  4. Add the olive oil to the baking sheet and toss the sweet potatoes so they are evenly coated.
  5. Add the garlic, kale, and pepper to the sweet potatoes and mix until all ingredients are well combined.
  6. Bake for 20 minutes or until sweet potatoes are fork tender.
