Ingredients

  • 800grams diced pork belly
  • 2 cups dashi
  • 2 tablespoons mirin
  • 2 tablespoons soy sauce
  • 2 tablespoons sugar
  • 2 tablespoons sake
  • 1 tablespoon grated ginger

Directions

  1. Preheat oven to 170°C
  2. Place diced pork belly in a large oven-proof pot, and turn heat to high.
  3. Once the pork belly has browned, reduce heat to low and add dashi, mirin, soy sauce, sugar, sake, and ginger.
  4. Cook on low heat for 3 minutes, stirring occasionally.
  5. Transfer pot to preheated oven, and cook for 1 hour.
  6. Serve and enjoy.

*Optional: If you don’t have an oven-proof pot, transfer the pot contents into a baking dish and proceed with step 5. *Insert dad joke: “If you don’t have an oven-proof pot, you must pot roast!”
