Ingredients

  • 2 large onions, finely chopped
  • 2 cups of gram flour
  • 2 tablespoons of turmeric
  • 2 teaspoons of chili powder
  • 1 teaspoon of cumin powder
  • 2 large potatoes, boiled, peeled and grated
  • 1/2 cup of fresh cilantro, chopped
  • 2 tablespoons of vegetable oil
  • 1 cup of water
  • Salt and pepper to taste (optional)

Directions

  1. Start by prepping the ingredients by finely chopping the onion and cilantro. Boil and peel the potatoes and grate them with a cheese grater.
  2. In a large bowl, mix together the gram flour, turmeric, chili powder and cumin powder. Mix together until the spices are evenly distributed throughout the flour.
  3. Add the potatoes, onion, cilantro, oil and a cup of water to the bowl. Mix everything together to make a paste.
  4. Heat a large pan to medium-high heat.
  5. Using a spoon, scoop small amounts of the pakora paste and drop them into the hot oil. Be careful not to overcrowd the pan, or the pakora will not be crisp.
  6. Fry the pakora for 3-4 minutes, flipping them over half way through to ensure they are evenly cooked.
  7. When the pakora are golden brown, remove them from the pan and place them onto a plate lined with a paper towel to absorb the excess oil.
  8. Sprinkle with some salt and pepper, if desired (though this is optional - you don’t want to overdo it with the salt and pepper for the toddlers!).
  9. Serve the Kadi pakora hot with your favorite chutney and watch your todders devour them.
