    Ingredients

  • 2 cups of plain yogurt (unsweetened)
  • 1 cup of water
  • 1/4 cup of chickpea flour (besan)
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of cumin seeds
  • 2 tablespoons of vegetable oil
  • Salt to taste

    Directions

    1. In a large bowl, mix together the yogurt and chickpea flour until well combined. Add water and whisk until smooth.
    2. Heat vegetable oil in a deep pan over medium heat. Add cumin seeds and let them sizzle for a few seconds before adding turmeric powder.
    3. Pour the yogurt mixture into the hot pan, stirring constantly to prevent lumps from forming. Keep stirring until the mixture thickens and starts bubbling.
    4. Reduce heat to low and continue cooking for about 10-15 minutes, stirring occasionally. If the Kadhi becomes too thick, add a little more water.
    5. Season with salt to taste and turn off the heat. Serve hot with some steamed rice or roti (Indian flatbread).
