Ingredients
- 2tbsp ghee or oil
- 3 litres water
- 2 teaspoons cumin seed
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon chilli flakes
- 1 teaspoon garlic paste (or 2 cloves)
- 1 tablespoon ginger paste (or 1 inch fresh ginger root)
- 2 tablespoons tomato paste
- 1 large onion finely chopped
- 2 large green chillies
- 2 tablespoons chickpea flour
- 400mL yoghurt
- 3 cups fresh coriander leaves
- 2 cups vegetable oil
- 250 grams gram flour
- 1 teaspoon chilli powder
- 500 grams potatoes finely chopped
- 1/2 teaspoon garam masala
- Salt to taste
Directions
- Start by heating 2 tablespoons of ghee or oil in a large pan or pot.
- Add the cumin seeds and saute for about a minute.
- Then add the turmeric powder and the chilli flakes and saute for a minute or two.
- Add the onion, garlic paste, ginger paste, tomato paste, and green chillies and saute for 2-3 minutes.
- Now add the chickpea flour and mix it in well with the other ingredients.
- Pour in the yoghurt, add the coriander leaves, and mix everything together.
- Cook over medium heat for about 15-20 minutes.
- In the meantime, heat the vegetable oil in a separate pan and add the gram flour, chilli powder, garam masala and salt.
- Mix everything together until it forms a thick paste.
- Now add the chopped potatoes, mix well and cook for about 10 minutes.
- Once the potatoes are cooked, turn off the heat and let the mixture cool.
- Once the kadhi is done and the pakora mixture is ready, let’s get frying.
- Take a spoonful of the pakora mixture and shape into balls.
- To check if the oil is the right temperature, drop a piece of the mixture into the oil. If it floats to the top, the oil is ready.
- Now start frying the pakoras in batches, making sure not to overcrowd the pan.
- Fry them for about 5 minutes until they are golden brown and crispy.
- Once the pakoras are cooked, remove them from the oil and drain them on a plate lined with paper towels.
- Serve your kadhi pakoras with steamed rice or chapati and enjoy with your family.
