Ingredients

  • 2 tablespoons of oil
  • 3 cloves of garlic, minced
  • 1 teaspoon of grated ginger
  • 4 tablespoons of tomato paste
  • 2 teaspoons of garlic powder
  • 1 teaspoon of chili powder
  • A pinch of turmeric powder
  • ½ teaspoon of garam masala
  • 12 ounces of mushrooms, sliced
  • ½ cup of roasted cashews
  • 1 tablespoon of chopped cilantro

Directions

  1. Heat oil in a frying pan.
  2. Add garlic and ginger; stir fry until fragrant (60 to 90 seconds).
  3. Add tomato paste, garlic powder, chili powder, turmeric, and garam masala and stir fry for another minute. It’s time to add a little spice to the dish!
  4. Add mushrooms and cashews, stirring every few minutes until mushrooms are tender and the mixture has thickened.
  5. Let everything cook for a few more minutes, then garnish with cilantro and serve. For an extra bit of temptation, sprinkle over some freshly chopped cilantro!
