- 600g pumpkin, peeled, deseeded and cubed
- 1 apple, peeled, cored, and cubed
- 2 tablespoons vegetable oil
- 2 tablespoons butter
- 1 onion, diced
- 2 cloves garlic, crushed
- 2 teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- 1 liter vegetable stock

Heat oil and butter in a large saucepan over medium heat.

Add onion and garlic, and stir regularly for 2-3 minutes, or until onion is translucent.

Add the pumpkin and apple, and stir regularly for 3-4 minutes, or until the vegetables are soft.

Add the cinnamon and nutmeg, stirring to coat the vegetables.

Pour in the vegetable stock and bring to a boil.

Reduce to a simmer and cook for 20 minutes, or until the vegetables are tender.
