Ingredients:
- 410g self-raising flour
- 2 teaspoons baking powder
- ¼ teaspoon nutmeg
- 225g butter or vegan margarine
- 2 tablespoons corn starch
- 50g almond flour
- 175g sugar and sweetener
- 300ml plant-based cream
- 500g cream cheese or vegan cream cheese
- 125ml plant-based milk
- 125g unsalted butter or vegan margarine
- ½ teaspoon lemon zest
Directions:

Preheat the oven to 180°C (356°F).

In a large bowl, mix together the self-raising flour, baking powder, nutmeg, and 25g of the butter or vegan margarine.

In a separate bowl, mix together the corn starch, almond flour, and sugar and sweetener until combined.

In a third bowl, mix together the cream, cream cheese or vegan cream cheese, 100ml of the plant-based milk, and the remaining butter or vegan margarine.

Add the wet mixture to the dry mixture and mix until combined.

Pour the batter into a greased and lined 24 cm (9.4 in) springform tin for baking.

Bake in the preheated oven for 25 minutes, or until a skewer inserted into the center of the cake comes out clean.

Once the cake is baked, remove from the oven and allow to cool for 10 minutes.

Meanwhile, in a small bowl, mix together the remaining 25ml of plant-based milk, lemon zest and the remaining 25g of butter or vegan margarine.

Once the cake has cooled, spread the lemon zest mixture evenly over the top of the cake.
