  • 2 lbs. pork shoulder, trimmed and cut into 2 cm cubes
  • 2 onions, finely chopped
  • 4 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cups chicken stock
  • 2 tablespoons fresh parsley, finely chopped
  • 2 bay leaves

Directions

  1. Preheat oven to 200°C.

  2. Heat olive oil in a large oven-proof pot over medium heat.

  3. Add pork and brown on all sides.

  4. Add onions and garlic and cook until softened, about 5 minutes.

  5. Add tomato paste and balsamic vinegar and cook for another minute.

  6. Pour in chicken stock and stir to combine.

  7. Add bay leaves and bring to a gentle simmer.

  8. Cover pot and transfer to the oven. Bake for 1 hour.

  9. Remove pot from oven and stir in parsley.

  10. Return to the oven and bake for another 20 minutes, or until pork is tender.

  11. Serve jambon braisé with your favorite sides and enjoy!
