Ingredients

  • 2 tablespoons Olive Oil
  • 1 Onion, finely diced
  • 1 large green bell pepper, diced
  • 4 cloves Garlic, minced
  • 2 Zucchinis, diced
  • 125g Pork Sausage, sliced
  • 1 teaspoon Thyme Leaves
  • 2 teaspoon Paprika
  • 2 teaspoon Cayenne Pepper
  • 375g Long Grain Rice
  • 700ml vegetable or chicken stock
  • 500g chunk tomatoes
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons roughly chopped Parsley

Directions

  1. To begin with, heat the oil in a large pot over medium-high heat.
  2. Add the onions, bell pepper, and garlic and cook until softened, about 3 minutes.
  3. Then, add the zucchini and sausage, and cook for a few more minutes until the vegetables are softened and the sausage is lightly browned.
  4. Add the thyme, paprika, and cayenne pepper and stir to combine.
  5. Next, stir in the rice and toast for 1-2 minutes.
  6. Pour in the stock, diced tomatoes, and Worcestershire sauce, and stir to combine.
  7. Reduce the heat to low, cover the pot, and simmer for 20 minutes, stirring occasionally.
  8. Finally, remove the pot from the heat and let stand for 5 minutes. Stir in the parsley and fluff the jambalaya with a fork before serving.

*Tip: For a little extra flavor, you can add 1/4 teaspoon of chili flakes to give the jambalaya some kick!
