Ingredients
- 2 tablespoons Olive Oil
- 1 Onion, finely diced
- 1 large green bell pepper, diced
- 4 cloves Garlic, minced
- 2 Zucchinis, diced
- 125g Pork Sausage, sliced
- 1 teaspoon Thyme Leaves
- 2 teaspoon Paprika
- 2 teaspoon Cayenne Pepper
- 375g Long Grain Rice
- 700ml vegetable or chicken stock
- 500g chunk tomatoes
- 1 teaspoon Worcestershire sauce
- 2 tablespoons roughly chopped Parsley
Directions
- To begin with, heat the oil in a large pot over medium-high heat.
- Add the onions, bell pepper, and garlic and cook until softened, about 3 minutes.
- Then, add the zucchini and sausage, and cook for a few more minutes until the vegetables are softened and the sausage is lightly browned.
- Add the thyme, paprika, and cayenne pepper and stir to combine.
- Next, stir in the rice and toast for 1-2 minutes.
- Pour in the stock, diced tomatoes, and Worcestershire sauce, and stir to combine.
- Reduce the heat to low, cover the pot, and simmer for 20 minutes, stirring occasionally.
- Finally, remove the pot from the heat and let stand for 5 minutes. Stir in the parsley and fluff the jambalaya with a fork before serving.
*Tip: For a little extra flavor, you can add 1/4 teaspoon of chili flakes to give the jambalaya some kick!
