Ingredients

  • 4 cups of basmati rice, plumped and washed
  • ½ cup of vegetable oil
  • 2 onions, chopped finely
  • 2 cloves of garlic, crushed
  • 2 tablespoons of ginger paste
  • 1 tablespoon of ground coriander
  • 2 tablespoons of garam masala
  • 2 green chillies, chopped
  • 4 tablespoons of cashew nuts, chopped
  • 2 tablespoons of raisins
  • 2 tablespoons of fresh cilantro, chopped
  • 2 tablespoons of mint leaves, chopped
  • 1 teaspoon of turmeric
  • 4 tablespoons of yoghurt
  • 2 potatoes, cubed
  • 2 cooked and shredded chicken breasts
  • 2 cups of water

Directions

  1. Heat oil in a large saucepan on medium-low heat.
  2. Add the onions, garlic and ginger, and cook for about 5 minutes until the onions are cooked and golden brown.
  3. Add the ground coriander, garam masala, green chillies and cashews, and fry for another few minutes.
  4. Add the raisins, cilantro, mint leaves, turmeric, yoghurt, potatoes, chicken and rice. Stir through until the ingredients are evenly mixed.
  5. Pour in the water, cover the saucepan and reduce the heat to low.
  6. Simmer for approximately 25 minutes, or until the rice is cooked and most of the liquid has been absorbed.
  7. Serve the Hyderabadi Biryani and enjoy with a side of refreshing mint and yoghurt raita.
