Ingredients

For the soba

  • 120 g soba noodles
  • 2 tsp dashi powder
  • 2 tsp soy sauce
  • ¼ tsp sesame oil

For the sauce

  • 2 tbsp soy sauce
  • 2 tsp honey
  • 2 tsp ginger, minced
  • 2 tsp rice vinegar
  • 1 tsp sesame oil

For the topping

  • 1 carrot, grated
  • 1 cucumber, cut into thin slices

Directions

  1. Bring a pot of lightly salted water to a boil.

  2. Add the soba noodles and cook for 2 minutes.

  3. Drain the noodles and rinse with cold water.

  4. In a large bowl, mix together the dashi powder, soy sauce, and sesame oil.

  5. Add the soba noodles and toss to combine.

  6. To make the sauce, in a medium bowl combine the soy sauce, honey, ginger, rice vinegar, and sesame oil.

  7. When ready to serve, mix the grated carrot and cucumber slices into the soba.

  8. Serve the soba with the sauce and a sprinkle of sesame seeds.
