Ingredients

  • 4 cups wheat flour
  • 1 teaspoon hing (asafoetida)
  • 2 tablespoons oil
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon chili powder
  • 1 teaspoon garam masala
  • 2 tablespoons sesame seeds
  • 2 teaspoons kasoori methi or fenugreek leaves
  • 1 teaspoon baking powder
  • Water, as needed
  • Oil, for frying

Directions

  1. In a large bowl, mix the wheat flour, hing, oil, cumin, coriander, chili powder, garlic and garam masala together.
  2. Add the sesame seeds, kasoori methi or fenugreek leaves, and baking powder to the bowl and mix until everything is well-combined.
  3. Gradually add water to the mixture until the dough forms and can be kneaded into a soft ball.
  4. Kneed the dough for 5 minutes, then cover it and set it aside for at least 15 minutes.
  5. Roll the dough into a long rope-like shape, then cut it into small balls.
  6. Flatten each ball slightly and place them on a floured surface.
  7. Roll out the flattened dough into a thin circle and set aside.
  8. Heat oil in a deep-fryer or pot to 350 degrees Fahrenheit (176 degrees Celsius).
  9. Place the kachoris in the hot oil and fry them until they are golden brown.
  10. Remove the kachoris from the oil and serve warm.
