Ingredients

  • 4 large eggs
  • 2 large escallion stalks (or 2 tablespoons of chopped onion)
  • 2 tablespoons of avocado oil
  • 400g of gyutan (Japanese beef tongue)
  • 1 tablespoon of soy sauce
  • 2 cups of cooked rice

Directions

  1. Start by cracking each egg into a medium bowl and whisking them together.
  2. Then, add the chopped onion or escallion stalk to the eggs and whisk together.
  3. Heat a 10-12 inch frying pan on medium-high heat and add the avocado oil.
  4. Once the oil is hot enough, add the egg mixture to the pan and let it cook for about 2 minutes.
  5. Flip the egg mixture once one side is light golden brown, and transfer it to a plate.
  6. Cut the gyutan into thin slices and add it to the same pan.
  7. Cook the gyutan for approximately 3-4 minutes until it’s lightly browned.
  8. Pour the soy sauce over the gyutan and stir fry for 1 minute until the sauce has been absorbed.
  9. Turn the heat down to low and add the cooked rice to the pan.
  10. Combine the rice and gyutan together and let it cook for 2 minutes.
  11. Finally, add the cooked egg mixture to the pan and combine all of the ingredients together. 12.Cook for an additional 1-2 minutes, or until the ingredients are thoroughly combined and the mixture is hot all the way through.
